Cockroaches are an indicator that something is amiss in a commercial kitchen. And if a kitchen has cockroaches, it’s very possible other pests are entrenched — and a sanitation maintenance program probably is lacking as well.
Sanitation is needed, in conjunction with a proper rotation of baits, powders and liquids. Borate powders work well against cockroaches and other insects that groom heavily. Treat drains with properly labeled borate powders and insect growth regulators (IGRs). Use liquid residual insecticides between appliances and in other hard-to-reach areas. Educate the customer about sanitation and proper trash removal.
